Quiere un Taco?

Need an easy meal?  Do you like Mexican food?  Do you have

a crock-pot?

Grab your salsa and let’s go!

Ingredients:

  • 3-4 Chicken Breast
  • 24 ounces of Salsa (Your choice. I like Trader Joe’s)

Directions:

Place chicken in crockpot and cover with salsa. Turn crockpot onto the low setting and cook for 5-6 hours.

Take a hand mixer and shred  chicken in 2.2 seconds!! 

Place chicken on a low carb tortilla shell and top with your favorite mexican sides!  And just like that you have a great, healthy, low-glycemic meal on the table! 

Our favorite toppings:

  • Shredded lettuce
  • Pico de gallo > Dice up 3/4 onion, 1 cup of cilantro leaves and 5 tomatoes. Salt, pepper and lemon juice to taste. 
  • Cheese
  • Guacamole 

This is a family favorite and a mommy favorite because of the simplicity of the recipe and it’s easy cleanup! CANT BEAT THAT!
