Grab your salsa and let’s go!
- 3-4 Chicken Breast
- 24 ounces of Salsa (Your choice. I like Trader Joe’s)
Place chicken in crockpot and cover with salsa. Turn crockpot onto the low setting and cook for 5-6 hours.
Take a hand mixer and shred chicken in 2.2 seconds!!
Place chicken on a low carb tortilla shell and top with your favorite mexican sides! And just like that you have a great, healthy, low-glycemic meal on the table!
Our favorite toppings:
- Shredded lettuce
- Pico de gallo —> Dice up 3/4 onion, 1 cup of cilantro leaves and 5 tomatoes. Salt, pepper and lemon juice to taste.
This is a family favorite and a mommy favorite because of the simplicity of the recipe and it’s easy cleanup! CAN’T BEAT THAT!
