Chicken Spaghetti with Grape Tomatoes

I’m not much of a pasta girl; (a blessing, I know!) however, something this week changed a little and I craved some pasta. I told myself, “I’m not afraid of pasta, so pasta it is!” It’s so important to remember our body needs carbs! Carbs fuel our bodies. Complex carbs that is! And where is the fun in depriving yourself?? There isn’t any!

This recipe was a Pinterest find that I adjusted for my family. You are welcome to do the same!

  • 4 skinless chicken breast
  • 1 1/4 tsp each of dried oregano
  • 1 1/4 tsp dried basil
  • 1 1/2 garlic powder
  • salt and fresh pepper
  • 14 oz spaghetti (high fiber, low carb, all natural)
  • 1 cup grape tomatoes
  • 6-8 cloves garlic, minced
  • 4 tsp extra virgin olive oil
  • 4 tbsp chopped fresh basil



Season chicken generously with salt, pepper, garlic powder, oregano and basil. Grill chicken until done! Slice chicken in strips.

Cook pasta according to the package directions. Reserve about 1/2 cup pasta water before draining.

While pasta cooks, add olive oil to skillet on high heat. Add garlic and sauté until golden brown (do not burn).

Add tomatoes to the garlic, salt and pepper and reduce heat to medium-low. Sauté about 3-4 minutes.

When pasta is drained, add pasta to tomatoes and toss well. If pasta seems too dry, add some of the reserved pasta water. Add fresh basil and chicken and toss well.


Serve with a spinach salad! Enjoy!
